Two of my best Resident sources have told me that this is the restaurant you go to in Nolita when you’re not in a hurry and you want to take your time to eat and enjoy good Spanish food and wine.
“Socarrat” is that delectable crust that forms at the bottom of the paella pan when the liquid is rendered and the rice has reached its peak of succulence. In other words, “socarrat” is the result of paella cooked to perfection.
